Badam Kheer - An Enriched Dessert Variant

 


A creamy & sweet textured dish, Almond (Badam) Kheer is a delicious & famous dessert of North India prepared with gently grounded almonds & milk. With the enriched divine flavor, the kheer consists high energy amount & so nutritious for children. Almond kheer is a celebratory sweet & is made on weddings & festivals, & is a perfect way for ending the meal. Badam or Almond kheer is considered to have the origins in Mughal India an indulgent delicacy. Let’s know the recipe with ingredients and the method.

Ingredients:

  • almonds-20
  • sugar-200 gm
  • green cardamom powder-1 tsp
  • For Garnishing:
  • Slit & sliced almonds-10
  • For The primary Dish:
  • milk-2 litre

For Toppings:

saffron-1 pinch

Method:

1) Clean the almonds completely & soak them overnight in water. Soaking is necessary as it not only increases the value of nutrients of nuts but also happens simpler to cook. You could also soak the badams in milk. But in such case you should keep soaked ones in the refrigerator.

2) Take the almonds from the fridge, peel to detach the outer cover, clean & grind them to make a paste. Use slight milk if you find the mixture too tight.

3) Then put the milk for boiling. Let it simmer with low flame for ten mins. Drop the almonds & cook with low flame until the milk is lowered to less than 50%. You should constantly stir it or the milk would stick to bottom.

4) Next drop the sugar, powdered cardamom & lower more to simmer with low flame for next ten mins. You could also drop some well condensed milk or grated khoya if you want it enriched.

5) Once the mixture starts to become thick, include the cardamom powder & the saffron strands mixture. Stir properly.

6) Detach from flame. Decorate with chopped pistachios & almonds.

7) Distribute at room temperature or chilled after having food, or as & when you want to have.
